Easy recipe Sweet Potato Waffles

These sweet potato waffles are so easy to make.

I adapt the recipe as I go or according what ingredients  I have : you want #glutenfree waffles. Just use oat meal instead of regular flour. You can easily make oat flour yourself : put some oats in your blender, swirlll and you have oat flour.

You want a vegan version : use coconut oil instead of butter, use plant based milk like soy milk, almond milk, oat milk. Just what use what you have. The only milk I never use for  baking is rice milk. Im just not a fan of rice milk. To replace the egg, use egg replacer** or other substitutes for eggs.

** you find eggreplacer (white powder) in every organic (bio) store or supermarket.


2 sweet potatoes

50 ml (1/4 cup) agave syrup
5 tablespoons of coconut oil
1/2 tablespoon lemon juice
1 teaspoon vanilla extract
240 ml plant based milk of choice
200 g  (1+1/2 cup) flour
1 + 1/2 teaspoon baking powder
1 pinch of salt
6 tablespoons of cane sugar
1 egg or 1 teaspoon eggreplacer for a #veganversion

How to

  • Steam or bake sweet potatoes – cut in halves – let cool – peel and put in a bowl .
    Melt coconut oil.
  • take a bowl add all wet ingredients and take another bowl and add all dry ingredients
  • mix dry and wet ingredients – let the batter sit for a couple of minutes before you start baking
  • bake waffles
