I was hungry … didn’t feel like cooking and had a pumpkin left that’s how this lovely toast was born.
Good food just makes me happy 💃💃💃💃 (crappy food too sometimes but then afterwards I feel like crap and that … home gurlll doesnt like!! #nobueno).
Pumpkin puree is so easy to make and its goooooooddddd!
I can make approx. 15 minutes! All you need to do is stare at your micro wave for approx. 12 minutes and then mash with a fork and add some stuff … and you’re good to go!! Duhhh???

If you dont have a micro wave, use your oven, it takes 3x longer but the silver lining is, that your pumpkin puree will taste even better!!!
1. Buy a small organic firm pumpkin (it needs to fit into your micro wave)
2. Put it in the micro wave (do not peel) for 10 to 15 minutes
3. Cut in half. Remove seeds with a spoon and scoop out the flesh with a spoon
4. Put in a bowl, add 1/2 small glass of milk, a tablespoon of coconut oil (for creaminess and more flavour) and mash with a fork. Season with whatever spices you like for your mash/puree like salt, pepper, nutmeg, … you like it to be spicy add some chiliflakes, paprika, ….
I like a #vegan pumpkin puree so I use #plantbasedmilk and #coconutoil but you can use regular milk and butter if you want! Use what you have.
You can keep the pumpkin puree in the fridge for a couple of days and you easily can freeze it.
Pumpkin puree is great as a pizza or taco topping or just on toast.
For my toast, I sliced some fresh fennel, cut some spring onion, seasoned the toast with pepper & salt.
